Fresh Cilantro Pesto

In all seriousness your first thought in the middle of the winter is likely not cilantro pesto. But, this easy to make, yummy pesto will be a memorable treat no matter the occasion and will compliment just about any meal.

This recipe is simple and we like it that way. With only cilantro, parsley, garlic, cashews, olive oil and salt you can’t go wrong. This pesto is creamy and can be a great sandwich spread, salad dressing or spread on grilled veggies and meats.
We use a Magic Bullet or Ninja smoothie blender to get a creamy consistency. You can use any type of smoothie blender that works well for you. This pesto keeps well in the fridge and reheats nicely. Larger quantities of cilantro pesto can be made and keep to eat on the run, making hectic life just a bit yummier.
This recipe can also be adjusted easily to be a bit spicier with more garlic or creamier with more cashews. The result is a fresh super green vegan dish that goes with just about anything.
